Making your own meals all the time can get a little boring and the “same old same old”. I’m someone who won’t eat my first meal until around 12:30 in the afternoon. Some days breakfast doesn’t sound good but neither does a salad. This Tomato Spinach Quesadilla is sure to hit the spot no matter what!
1 Whole Grain Tortilla
1/2 Tomato, thinly sliced
One hand full of Fresh Spinach
Mozerella Cheese (enough to cover your quesadilla, shredded)
On one side of the quesadilla, spread enough shredded cheese to cover it fully. Next, on the same side, toss on the tomato slices and the handful of fresh spinach. Make sure everything is nice and even. Top everything with more mozerella cheese. Now get the stove top ready by heating a non stick pan to a medium heat. Gently place the quesadilla in the pan. As one side cooks, press the quesadilla onto itself so the cheese will melt onto both sides. Once one side of the quesadilla is a nice brown color, carefully flip it, and do the same to the other side.
I used the remaining part of the tomato and some left over cucumber and thinly sliced them. I topped both with salt and pepper. This is an easy way to fill up on a healthy snack and goes great with the quesadilla!
